Etkinlikte, hamur i\u015flerinin g\u00fcndelik ya\u015famdaki ekonomik yerinden, \u00c7erkez s\u00fcrg\u00fcn\u00fcn\u00fcn mutfak k\u00fclt\u00fcr\u00fcne yans\u0131malar\u0131na kadar pek \u00e7ok konu ele al\u0131nd\u0131.<\/b><\/p>\n<p>Nil\u00fcfer Belediyesi taraf\u0131ndan d\u00fczenlenen, Prof. Dr. \u00d6zlem Do\u011fu\u015f Varl\u0131\u2019n\u0131n kurgusu ve sunumuyla ger\u00e7ekle\u015fen \u201cGastroetnom\u00fczikolojik Kaynatmalar\u201d program\u0131n\u0131n bu ayki konuklar\u0131, ara\u015ft\u0131rmac\u0131 Durmu\u015f Durukan ve Zeynep M\u0131sra T\u00fcrker oldu. Bayram geleneklerinden g\u00f6\u00e7 hikayelerine uzanan s\u00f6yle\u015fide, yeme\u011fin sadece doyurucu bir fiziksel ihtiya\u00e7 de\u011fil, ayn\u0131 zamanda k\u00fclt\u00fcrel bir bellek ve toplumsal bir ifade bi\u00e7imi oldu\u011fu vurguland\u0131. Etkinli\u011fi, Nil\u00fcfer Belediye Meclis \u00dcyesi Demirhan Aslan da takip etti.<\/p>\n<p>S\u00f6yle\u015fide konu\u015fan Durmu\u015f Durukan, yemek sosyolojisi ve hamur i\u015flerinin toplumsal hayattaki yeri \u00fczerine yapt\u0131\u011f\u0131 ara\u015ft\u0131rmalar\u0131 aktard\u0131. Siyaset bilimi, medya ve k\u00fclt\u00fcrel \u00e7al\u0131\u015fmalar alan\u0131nda e\u011fitimini mutfak sanatlar\u0131yla birle\u015ftiren Durukan, Anadolu\u2019da otuza yak\u0131n ili gezerek hamur i\u015fleri \u00fczerine saha \u00e7al\u0131\u015fmalar\u0131 yapt\u0131\u011f\u0131n\u0131 belirtti.<\/p>\n<p><b>LEZZETLERE SOSYOLOJ\u0130K BAKI\u015e<\/b><\/p>\n<p>Modern gastronomi trendleri ile geleneksel lezzetleri sosyolojik bir pencereden k\u0131yaslayan Durukan, hamur i\u015flerinin ekonomik kriz d\u00f6nemlerindeki i\u015flevine dikkat \u00e7ekti. Durukan, \u201cPop\u00fcler k\u00fclt\u00fcrde f\u00fczyon mutfa\u011f\u0131 veya \u015fatorbiryan gibi lezzetler trend olurken, K\u00fcrt b\u00f6re\u011fi gibi geleneksel hamur i\u015fleri usta-\u00e7\u0131rak ili\u015fkisiyle ve 50 y\u0131ld\u0131r de\u011fi\u015fmeyen yap\u0131s\u0131yla varl\u0131\u011f\u0131n\u0131 s\u00fcrd\u00fcr\u00fcyor. Enflasyonun artt\u0131\u011f\u0131 d\u00f6nemlerde insanlar\u0131n hamur i\u015fine y\u00f6neldi\u011fini g\u00f6r\u00fcyoruz. B\u00f6rek, kapitalizme hizmet eden modern gastronomi mekanlar\u0131n aksine, insan\u0131n g\u00fcndelik \u00f6\u011f\u00fcnlerini daha uygun maliyetle ge\u00e7i\u015ftirmesini sa\u011fl\u0131yor ve g\u00fcn\u00fc kurtar\u0131yor\u201d ifadelerini kulland\u0131.<\/p>\n<p><b>\u00c7ERKEZ K\u00dcLT\u00dcR\u00dc VE YEMEKLER\u0130<\/b><\/p>\n<p>\u00c7erkez k\u00fclt\u00fcr\u00fc ve yemekleri \u00fczerine tez \u00e7al\u0131\u015fmalar\u0131 yapan Zeynep M\u0131sra T\u00fcrker ise, \u00c7erkez diasporas\u0131n\u0131n mutfak al\u0131\u015fkanl\u0131klar\u0131n\u0131n ard\u0131ndaki tarihi travmalara de\u011findi. 21 May\u0131s 1864 \u00c7erkez S\u00fcrg\u00fcn\u00fc\u2019n\u00fcn toplum \u00fczerindeki derin etkilerini anlatan T\u00fcrker, s\u00fcrg\u00fcn s\u0131ras\u0131nda Karadeniz\u2019de ya\u015fanan b\u00fcy\u00fck can kay\u0131plar\u0131 nedeniyle \u00c7erkezlerin bal\u0131k t\u00fcketmekten ka\u00e7\u0131nd\u0131\u011f\u0131n\u0131, bunun yerine et ve et \u00fcr\u00fcnleri a\u011f\u0131rl\u0131kl\u0131 bir beslenme rutini geli\u015ftirdiklerini ifade etti.<\/p>\n<p>Geleneksel \u201cHaluj\u201d yap\u0131m\u0131n\u0131n sadece bir mutfak mesaisi olmad\u0131\u011f\u0131n\u0131 belirten T\u00fcrker, \u201cKad\u0131nlar\u0131n bir araya gelerek haluj yapmas\u0131, asl\u0131nda diasporada ya\u015fayan bir halk\u0131n anavatanla ba\u011flar\u0131n\u0131 canl\u0131 tutma \u00e7abas\u0131d\u0131r. Bu bulu\u015fmalar, kimli\u011fin \u00e7ocuklara ve gen\u00e7lere aktar\u0131ld\u0131\u011f\u0131, birlik ve beraberli\u011fin peki\u015ftirildi\u011fi \u00e7ok \u00f6nemli bir k\u00fclt\u00fcrel aktar\u0131m alan\u0131d\u0131r\u201d dedi.<\/p>\n<p>Gastronomi, tarih ve sosyolojinin i\u00e7 i\u00e7e ge\u00e7ti\u011fi s\u00f6yle\u015fi, k\u00fclt\u00fcrel dokuya uygun m\u00fczik ve y\u00f6resel lezzet sunumlar\u0131yla renklendi. Kat\u0131l\u0131mc\u0131lara pel\u00fcr ka\u011f\u0131d\u0131na sar\u0131l\u0131 K\u00fcrt b\u00f6re\u011fi, Paskalya \u00e7\u00f6re\u011fi ve Antakya kahkesi ikram edilirken; bu k\u00fclt\u00fcrel \u00e7e\u015fitlili\u011fe Fairouz \u015fark\u0131lar\u0131 ve \u201cLeylim Ley\u201d ezgileri e\u015flik etti.
